Ingredients
- 40 g cheddar cheese (coarsely grated)
- 60 g gouda cheese (coarsely grated)
- 1/2 small red onion (approx. 25 g)
- 5 g fresh parsley (or coriander)
- 1 medium tomato (approx. 100 g)
- 2 pcs wheat tortilla (approx. 24 cm)
- 150 g cooked minced beef
- 60 g frozen corn (thawed)
- 1 pinch of salt
Steps
- 1First, prepare the cheese mixture: in a small bowl, mix the two types of coarsely grated cheese.
- 2Peel the onion, then finely chop it along with the parsley (or coriander). Dice the tomato finely. Then, put everything into another bowl, season with a little salt, and mix thoroughly.
- 3Place a tortilla in a large pan (at least 24 cm), and evenly spread half of the minced meat on it. (If you don't have pre-cooked ground beef, sauté 180 g of ground beef with salt and pepper in a little oil for 5-8 minutes). Sprinkle half of the cheese mixture over it. Turn the heat to medium, and while the cheese starts to melt, add half of the corn and tomato mixture. Fold the tortilla in half and cook for about 20-30 seconds per side until golden brown and crispy. Repeat the process with the other tortilla.
- 4Cut the prepared quesadillas into triangles and serve immediately, while hot.
