Cut the chicken breast into smaller cubes and season with salt. Quarter the mushrooms and separate the broccoli into florets. Finely chop the onion and slice the garlic. Heat one tablespoon of oil in a pan and brown the meat on all sides, then set aside. In the same pan, sauté the onion until translucent, add the mushrooms, brown them, and finally add the garlic. After one minute of sautéing, remove from heat.
Cook the pasta according to the instructions on the package, drain it, but reserve 200 ml of the cooking water. Par-boil the broccoli until al dente.
Preheat the oven to 200 °C.
Chef's tip
You can also use brown button mushrooms for a more intense flavour.
The pasta cooking water helps the sauce become creamier and adhere better to the pasta.
