- 800 g Type B potatoes
- 150 g feta cheese (from sheep's milk)
- 250 ml 30% whipping cream
- 1 bunch spring onions
- 1 tablespoon unsalted butter
- 6 sprigs fresh thyme
- 3 cloves garlic
- 1 pinch ground nutmeg
- 1 pinch ground black pepper
- 1 pinch salt
Preheat the oven to 180 °C (top and bottom heat). Peel the potatoes and slice them thinly. In a small saucepan, heat the cream with half of the butter, but do not boil. Add the crushed garlic, the leaves picked from 4 sprigs of thyme, salt, pepper, and nutmeg. Remove from heat and stir in the crumbled feta cheese until it melts into the warm cream.
Slice the spring onions. Grease an ovenproof dish with the remaining butter. Layer half of the potatoes, lightly salt, pepper, sprinkle with a little nutmeg, some of the spring onions, and thyme. Continue layering until all ingredients are used up.
Pour the prepared cheese and cream mixture over everything. Place in the oven and bake for 50-55 minutes, until the potatoes are completely soft and the top is golden brown. Serve hot.
