
Salmon with sweet potato and broccoli

Preparation method
Preheat the oven to 180–185 °C. Prepare a baking tray or dish of approx. 20 cm × 30 cm and line it with baking paper.
Peel the sweet potato and cut it into thin slices. Separate the broccoli into florets, and cut half of the lemon into thin slices. In a small saucepan, melt the butter over low heat (approx. 1–2 minutes). Place the sweet potato and lemon slices, and broccoli florets into the baking tray, sprinkle with salt, pepper, ground chili, pour over the melted butter, and mix thoroughly. Place the salmon fillets on top of the vegetable mixture, then season them with salt and pepper as well. Put the tray into the oven and bake for 20–25 minutes at 180–185 °C.
While the salmon is baking, roughly chop the parsley and crumble the cream cheese.
Chef's tip
Cut the other half of the lemon into wedges and serve alongside the salmon – this way everyone can squeeze fresh lemon juice onto the fish to their liking.
