Kifli Kukták

A tetelas Oaxaca egyik legkedveltebb utcai finomsága: ropogósra pirított háromszög kukoricafalatok, gazdagon megtöltve krémesre tört, fűszeres feketebabbal. Tejföllel, morzsolt feta sajttal és friss korianderrel tálalva verhetetlen mexikói street food élmény.

Preparation method

Making the spiced black bean purée

1

Peel and finely chop the onion and garlic. Rinse the black beans under cold water and drain well.

2

Heat a little olive oil in a pan, add the finely chopped onion, and sauté until translucent for 3-4 minutes. Add the minced garlic, ground cumin, and dried oregano, then sauté for another minute until fragrant.

3

Add the drained black beans, season with salt and freshly ground black pepper, then pour in about 50 ml of water. Mash the beans with a potato masher or fork into a thick, spreadable purée, leaving some rustic whole beans intact. Cook for 2 minutes until thickened, then remove from the heat and let cool slightly.

Chef's tip

If you want an even richer filling, you can sprinkle a little grated cheese over the bean purée before folding the triangle, making the inside even juicier as the cheese melts.

Tetelas are a traditional Oaxacan street food that works wonderfully as a warm appetizer, snack, or light dinner accompanied by homemade salsa.
