Preheat the oven to 200 °C.

Divide the puff pastry into two parts and roll out both on a floured surface to a thickness of approx. 2 mm. Thoroughly brush both pastry sheets with the beaten egg yolk.

Sprinkle one pastry sheet evenly with coarse salt and whole caraway seeds. Cover with the other pastry sheet (brushed side down) and gently press them together.
