Preparation and cooking the rice
Rinse the sushi rice thoroughly in a sieve under cold running water until the water runs completely clear. Place it in a pot, add 400 ml of water, bring to a boil, then cover and cook over the lowest heat for 12 minutes. Turn off the heat and let it steam covered for another 10 minutes.
Cut the chicken breast fillet into very small cubes, or mince it in a food processor / grinder. Peel the fresh ginger and grate it finely.
Drop the frozen green peas into lightly salted boiling water for 2 minutes, then drain and immediately rinse with ice-cold water to retain their vibrant green color and crunch.
Chef's tip
The secret to perfectly fine egg and chicken crumble is continuous stirring: Japanese chefs hold four chopsticks together in one hand to stir in the pan, but a hand whisk does the job perfectly as well.
Soboro Donburi is not only excellent served fresh, but packed in a traditional Japanese bento box, it also makes a fantastic lunch enjoyed cold or at room temperature!
