Preparation and roasting
Preheat the oven to 200 °C (or use a grill pan). Wash the kapia peppers, place them on a baking sheet lined with baking paper, and roast for about 15-20 minutes until their skin blackens and blisters.
Remove the peppers from the oven, place them in a bowl, and cover with foil or a lid for 10 minutes. Then peel off their skin, remove the stems and seeds.
Making the dip and serving
Put the cleaned roasted peppers, hand-crumbled feta cheese, Greek yogurt, crushed garlic, red wine vinegar, extra virgin olive oil, and a pinch of chili flakes into a food processor or blender.
Chef's tip
You can also make the dip ahead of time: it stays fresh and delicious in an airtight container in the refrigerator for 3-4 days.
If you want an even smokier flavor, you can roast the peppers over an open flame or charcoal grill.
