Preheat the oven or a pan to high heat. Roast the kapia peppers and the deseeded chili pepper until their skin turns black and blistered. Place them in a bowl, cover for 5 minutes, then peel off the pepper skins and remove the seeds.
Place the roasted pepper flesh, garlic clove, feta cheese, Greek yogurt, extra virgin olive oil, lemon juice, and dried oregano into a food processor or blender.
Blending and serving
Puree the ingredients until you get a creamy yet rustic-textured dip. Taste it, and if you prefer a smoother texture, add a little more olive oil.
Chef's tip
If you want an even smokier flavor, roast the kapia peppers directly over charcoal embers or an open gas flame.
Stored in an airtight container in the refrigerator, it will stay fresh and delicious for 3-4 days.
