PREPARATION AND COOKING
Preheat the oven to 200 °C. Prepare a baking tray and line it with baking paper.
Clean, peel, and cut the vegetables for the fries (celery, beetroot, 320 g carrots) into sticks. Place them on the baking tray, drizzle with 30 ml oil, and salt. Toss thoroughly, then bake at 195–200 °C for 40–50 minutes.
Meanwhile, prepare the dip in a small bowl: mix the yogurt with mustard and finely chopped chives. Season with salt and pepper, then refrigerate to rest.
