
Tomato Chicken Breast with Mozzarella

Ingredients overview
- 240 g whole wheat pasta
- 1 tbsp olive oil
- 1 small red onion
- 1 clove garlic
- 400 g chicken breast fillet
- 1 tbsp tomato paste
- 1 can chopped tomatoes
- 1 tsp dried basil
- 2 tbsp fresh chives
- 150 g mozzarella cheese
- 1 pinch salt
- 1 pinch black pepper
Cook the pasta in lightly salted water according to the package instructions. Season the chicken breasts with salt and pepper on both sides. Heat the olive oil in a pan, then sear the whole chicken breasts on both sides – for about 3 minutes on one side and 4 minutes on the other. Remove the meat from the pan and set aside.
Leave the pan on the heat, reduce the flame, and sauté the chopped onion and crushed garlic in the remaining fat for 2 minutes. Then increase the heat, add the tomato paste, stir, then pour in the chopped tomatoes, sprinkle in the basil and chives. Cook the sauce over medium heat for 5 minutes. If it's too thick, add a little water.
Return the seared chicken breasts to the pan with the sauce, and place mozzarella slices (or grated cheese) on top of each. Cover the pan and leave on medium heat for 3-4 minutes until the cheese is nicely melted and the meat is fully cooked through. Serve with the cooked whole wheat pasta.
