Ez a könnyű és egészséges cukkinis pizza tökéletes választás, ha valami laktatóra vágysz, de kerülnéd a nehéz tésztákat. A ropogósra sült cukkini alap, a házi fűszeres paradicsomszósz és a nyúlós mozzarella találkozása igazi olasz életérzést varázsol az asztalodra, bűntudat nélkül. Ingredients overview
- 800 g zucchini
- 2 eggs
- 70 g parmesan cheese
- 1 clove of garlic
- 1 tsp dried oregano
- 2 pinches of salt
- 2 pinches of black pepper
- 200 g canned chopped tomatoes
- 1 onion
- 2 handfuls of fresh basil
- 1 tsp olive oil
- 125 g mozzarella cheese
- 115 g yellow bell pepper
- 150 g cherry tomatoes
Preheat the oven to 200 °C (top and bottom heat). Wash the zucchinis, trim the ends, and grate them on a fine grater. Season with salt (use half of the salt) and squeeze out all the water thoroughly (you can also use a kitchen towel). Add the eggs, crushed garlic, oregano, and parmesan. Season with pepper (half of the pepper), then mix thoroughly. Line a baking sheet with baking paper and shape the mixture into a flatbread of about 25 cm in diameter. Bake for 20 minutes.
Meanwhile, prepare the tomato sauce. Finely chop the onion and sauté in olive oil until golden. Add the chopped tomatoes, the remaining salt and pepper, and cook for about 10 minutes until thickened. Finally, blend it and stir in half of the basil (torn).
After 20 minutes, the crust will be golden brown and firm. Spread the tomato sauce over it, top with the mozzarella slices, halved cherry tomatoes, and sliced bell pepper. Bake for another 15 minutes. Serve garnished with the remaining fresh basil.
