Chop the cauliflower into coarse pieces (rice-like consistency) in a food processor. Lightly crush the coriander seeds in a mortar, no need to grind finely, just enough to release the aromas.
Cooking
Place the bulgur, chopped cauliflower, salt, crushed coriander, and raisins into a wide pot. Mix thoroughly. Add the butter, pour in 350 ml of cold water, then cover and bring to a boil.
From the moment it boils, cook on medium heat for 3 minutes, then stir quickly and cover again. Reduce the heat to minimum (or turn it off if you have a thick-bottomed pot), and let it steam under the lid for another 15-20 minutes until the bulgur is completely soft and has absorbed the water.
Chef's tip
If you desire a more intense flavor, briefly sauté the butter and spices (curry, coriander) in the pot before adding the bulgur and water.
