PREPARING THE BURGER
Cut the tomatoes into 16 slices. Peel the red onion and cut it into thin rings. Cook the bacon on a medium-hot grill or in a pan until golden brown on both sides, then set aside.
Form the meat into 4 patties, sized to fit the buns. Season both sides with salt and pepper, and brush with melted butter. Place on a medium-hot grill and cook for 3 minutes. Then flip the meat, brush with butter again, and cook for another 2 minutes. Finally, place 1 slice of cheese on each patty and cook for another 1 minute, until the cheese melts. Transfer the cooked patties to a plate.
Cut the burger buns in half and toast them on the grill, cut-side down.
Chef's tip
Do not overcook the meat! It should remain juicy inside, at most pink, like a classic steak. This is the only way the burger will be truly enjoyable.
