PEA PURÉE PREPARATION
Peel and finely chop the shallots.
Melt butter in a pan, then when it starts to foam, add the shallots and sauté until golden.
Add the green peas, season with salt and pepper. Pour in the broth and boil until the liquid is reduced by half. Finally, add the milk and cream, bring to a boil, and cook for 7-8 minutes.
Chef's tip
When making brown butter (beurre noisette), pay attention to the color: as soon as it turns amber and smells nutty, immediately remove it from the heat.
