Ingredients

  • 200 g broccoli
  • 250 g sweet potato
  • 3 eggs
  • 100 ml cooking cream
  • 1 clove garlic
  • 1 pinch salt
  • 1 pinch ground black pepper

    Preheat the oven to 180 °C.

    Fill a large pot halfway with water and bring it to a boil.

    Peel the sweet potato and cut it into slices about 0.5 cm thick. Wash the broccoli and separate it into smaller florets.

    Place the vegetables in the boiling water and cook on medium heat for 2 minutes, then drain.

    Arrange the par-cooked broccoli and sweet potato in a small ovenproof dish.

    In a bowl, whisk the eggs with the cooking cream and crushed garlic, then pour this mixture over the vegetables.

    Season with salt and pepper, then place in the oven and bake at 170-180 °C for about 15-20 minutes, until the top is golden brown.
