Ingredients
- 200 g broccoli
- 250 g sweet potato
- 3 eggs
- 100 ml cooking cream
- 1 clove garlic
- 1 pinch salt
- 1 pinch ground black pepper
Steps
- 1Preheat the oven to 180 °C.
- 2Fill a large pot halfway with water and bring it to a boil.
- 3Peel the sweet potato and cut it into slices about 0.5 cm thick. Wash the broccoli and separate it into smaller florets.
- 4Place the vegetables in the boiling water and cook on medium heat for 2 minutes, then drain.
- 5Arrange the par-cooked broccoli and sweet potato in a small ovenproof dish.
- 6In a bowl, whisk the eggs with the cooking cream and crushed garlic, then pour this mixture over the vegetables.
- 7Season with salt and pepper, then place in the oven and bake at 170-180 °C for about 15-20 minutes, until the top is golden brown.
