  • ½ pc Cauliflower
  • 120 g Plain yogurt
  • 100 g Flour
  • 7 g Garlic
  • 5 g Sweet paprika
  • 5 ml Lime juice
  • 5 g Garlic powder
  • 10 g Parsley
  • 40 g Butter
  • 2 g Salt
  • 15 g Granulated sugar
  • 40 g Sriracha
  • 2 g Pepper

    Preheat the oven to 235 °C and line a baking tray with baking paper. Break the cauliflower into smaller florets and set aside.

    In a bowl, mix the flour with the paprika, garlic powder, and a pinch of salt. Add water and mix into a smooth, thick batter. Add the cauliflower florets and toss them to coat thoroughly.

    Spread the battered cauliflower on the baking tray, leaving some space between them. Bake them in the preheated oven for 25 minutes, turning them halfway through to ensure even crispiness.

    Meanwhile, prepare the buffalo sauce: melt the butter with the sugar, then stir in the sriracha.

    Once the cauliflower is baked, brush them on all sides with the buffalo sauce and return them to the oven for another 10 minutes — be careful not to burn them.

    Finally, prepare the yogurt sauce: mix the yogurt with the pressed garlic, lemon juice, finely chopped parsley, and salt to taste.
