- ½ pc Cauliflower
- 120 g Plain yogurt
- 100 g Flour
- 7 g Garlic
- 5 g Sweet paprika
- 5 ml Lime juice
- 5 g Garlic powder
- 10 g Parsley
- 40 g Butter
- 2 g Salt
- 15 g Granulated sugar
- 40 g Sriracha
- 2 g Pepper
Steps
- 1Preheat the oven to 235 °C and line a baking tray with baking paper. Break the cauliflower into smaller florets and set aside.
- 2In a bowl, mix the flour with the paprika, garlic powder, and a pinch of salt. Add water and mix into a smooth, thick batter. Add the cauliflower florets and toss them to coat thoroughly.
- 3Spread the battered cauliflower on the baking tray, leaving some space between them. Bake them in the preheated oven for 25 minutes, turning them halfway through to ensure even crispiness.
- 4Meanwhile, prepare the buffalo sauce: melt the butter with the sugar, then stir in the sriracha.
- 5Once the cauliflower is baked, brush them on all sides with the buffalo sauce and return them to the oven for another 10 minutes — be careful not to burn them.
- 6Finally, prepare the yogurt sauce: mix the yogurt with the pressed garlic, lemon juice, finely chopped parsley, and salt to taste.
