Cook the pasta: In a large pot, bring a generous amount of salted water to a boil. Add the whole wheat pasta and cook according to package directions (approx. 8–10 minutes) until al dente.
Preheat the oven to 180 °C. Prepare a baking tray approximately 40 cm × 40 cm and line it with baking paper.
Meanwhile, prepare the vegetables: Grate the zucchini on a large-holed grater, finely dice the red onion, and finely chop the parsley.
Chef's tip
The frittata is also excellent cold, making it perfect for lunch the next day.
