Preparation method
Mix the soy sauce, ketchup, 1 tablespoon of olive oil, and cane sugar. Add the crushed garlic and mix thoroughly. Cut the tempeh into slices or cubes, place it in a bowl, and pour the prepared marinade over it. Let it marinate in the refrigerator for at least one hour.
Preheat the oven to 200 degrees Celsius. Bake the marinated tempeh for 20-25 minutes until the marinade caramelizes. During baking, you can baste the tempeh with the remaining marinade for an even more intense flavor.
Cook the black rice according to the instructions on the package, along with the cinnamon stick, allspice, and cloves. Once cooked, remove the whole spices, stir in the ghee butter (or regular butter), and season with salt to taste.
Chef's tip
It is worth marinating the tempeh the night before to achieve even deeper flavors.
If you don't have black rice, you can substitute it with brown rice or wild rice.
