Kifli Kukták

A klasszikus japán street food és izakaya fogás, a Tori Yawata Maki titka az omlós csirkecombfilé és a roppanós zöldségek tökéletes harmóniája. A zsenge sárgarépával és friss újhagymával feszesen feltekert csirkecombokat teppanyaki-stílusban serpenyőben pirítjuk, majd gazdag, házi készítésű szójaszószos-mirines-mézes teriyaki mázzal sűrűre karamellizáljuk. Falatnyi karikákra szelve, pörkölt szezámmaggal megszórva ellenállhatatlan és autentikus ázsiai élmény!

Preparation method

Preparation and rolling

1

Peel the carrots and cut them into fine, thin matchsticks (julienne). Cut the white and pale green parts of the spring onions into pieces about 8-10 cm long, matching the width of the meat (set aside a small amount of finely chopped green tops for the final garnish). Blanch the carrots in boiling water for 1-2 minutes, then drain and let cool.

2

Spread the chicken thigh fillets out on a cutting board. If necessary, gently butterfly the thicker parts or pound them to an even thickness of about 1 cm. Season lightly with salt and pepper.

3

Place a portion of blanched carrot strips and spring onion pieces on the lower third of each spread-out chicken thigh, then roll them up tightly into a roulade. Secure the rolls with kitchen twine or skewers (toothpicks) so they stay tightly held together during cooking.

Chef's tip

Rolling the vegetables tightly is key to achieving a beautiful, mosaic-like cross-section. Use a sharp chef's knife for slicing, and make sure to allow a few minutes of resting time so the meat juices stay inside the roulade.

If you would like to make it even more pungent, you can add a little Japanese shichimi togarashi spice blend or a squeeze of fresh lime juice when serving.
