A mexikói street food egyik legnagyobb büszkesége a gringas: puha búzatortillába rejtett fűszeres sült marhahúscsíkok, serpenyőben karamellizált édes ananászkockák és gazdagon olvadó cheddar sajt. Cut the beef sirloin into thin, bite-sized strips. Mix with 1 tablespoon of olive oil, the minced garlic, ground cumin, smoked paprika, half a teaspoon of salt, and freshly ground black pepper, then let it rest for 10 minutes.
Cut the pineapple into small cubes. Finely chop the red onion, chop the fresh coriander, and halve the lime.
Cooking and assembly
Heat a dry frying pan over high heat and toast the diced pineapple for 2–3 minutes until golden brown and lightly caramelized, then transfer to a plate.
Chef's tip
The secret to gringas is slower toasting in a dry pan: this way, the wheat tortilla becomes blistered and crispy, while the cheddar cheese melts creaminess into the spiced meat and fruit.
