Preparation and cooking the rice
Thoroughly rinse the sushi rice in cold water until the water runs clear, then cook it in twice the amount of lightly salted water. When done, stir in half of the salt and 1 tablespoon of sesame oil, then let it cool until lukewarm.
Cut the chicken thigh fillets into thin, long strips. In a bowl, mix with the soy sauce and finely grated garlic, then let marinate for 10 minutes.
Prepare the vegetables: cut the carrot into matchstick-thin strips, halve the cucumber lengthwise, scrape out the watery seeds, and also slice into thin strips.
Chef's tip
To slice the kimbap, use an extremely sharp knife and wipe it with a damp kitchen towel before each cut, ensuring perfectly smooth and neat slices without the rice sticking to the blade.
Kimbap is an ideal snack or picnic food: it tastes best at room temperature, as the rice easily hardens in the refrigerator.
