Preheat the oven to 190 °C.

Cut off the tops of the two garlic heads (about 1 cm), drizzle with 2 tablespoons of olive oil, wrap in aluminum foil, and bake for 45–50 minutes at 195–200 °C.

After baking, remove the garlic and let it cool for at least 15 minutes. Leave the oven on.
Chef's tip
If you're in a hurry, you can skip roasting the garlic; in this case, use more fresh garlic and a little extra butter. During wild garlic season, you can also make it with wild garlic pesto!
