Preparation method
Preparation and marinating
Peel and finely chop the garlic. Squeeze the juice from the lime. In a bowl, mix the sliced chicken with 1 tablespoon of olive oil, 2 tablespoons of piri piri spice blend, the lime juice, and a little chopped garlic. Let the meat marinate while you prepare the other ingredients.
Clean the vegetables. Peel and finely chop the red onion and the remaining garlic. Deseed and dice the bell pepper. Halve the zucchini, then slice it into half-moon shapes. Dice the tomatoes as well. Cook the brown rice in salted water according to the instructions on the package.
Frying and steaming
Heat 2 tablespoons of olive oil in a pan. Sauté the onion, the remaining garlic, chili to taste, zucchini, and bell pepper over medium heat for about 5-6 minutes. Add the tomatoes and 50 ml of water. Cover and steam over low heat for another 5 minutes.
Chef's tip
If you want an even more intense flavor, you can marinate the chicken the night before and store it in the refrigerator.
