- 500 g chicken breast fillet
- 1 pc egg (M size)
- 60 ml semi-skimmed milk
- 60 g Parmesan cheese (finely grated)
- 50 g fine wheat flour
- 70 g breadcrumbs
- 200 ml rapeseed oil
- 1 tsp ground sweet paprika
- 1 pinch salt
- 1 pinch ground black pepper
Prepare the chicken: cut the breasts in half lengthwise to get thinner slices, then lightly salt them.
Prepare three deep bowls for breading: in the first, place the flour, half a teaspoon of salt, pepper, and paprika. In the second, beat the egg with milk and a pinch of salt. In the third, mix the breadcrumbs with the finely grated Parmesan.
In a deep pan, heat about 0.5 cm of rapeseed oil. First, coat the chicken slices in the seasoned flour, then dip them into the egg mixture, and finally, press them thoroughly into the Parmesan breadcrumbs. Fry the breaded slices over medium heat for 2–4 minutes per side until golden brown and crispy.
