Preparation method
Preheat the oven to 220 °C (top and bottom heat).
Slice the garlic and chili peppers thinly, and separate the thyme into smaller sprigs.
Wash the razor clams thoroughly under cold running water. Check that all of them are closed; discard any that are open and do not close when touched. Pat the clams dry, then place them on a baking sheet lined with parchment paper. Drizzle with olive oil, sprinkle with garlic, chili, and thyme.
Chef's tip
Razor clams cook very quickly, be careful not to overcook them, as they can become chewy. As soon as they open, they are ready!
