Ingredients
- 500 g razor clams
- 2 pcs red chili pepper
- 3 cloves garlic
- 3 sprigs fresh thyme
- 2 slices sourdough bread

Instructions
- 1Preheat the oven to 220 °C (top and bottom heat).
- 2Slice the garlic and chili peppers thinly, and separate the thyme into smaller sprigs.
- 3Wash the razor clams thoroughly under cold running water. Check that all of them are closed; discard any that are open and do not close when touched. Pat the clams dry, then place them on a baking sheet lined with parchment paper. Drizzle with olive oil, sprinkle with garlic, chili, and thyme.
- 4Bake until all the clams open – this takes approximately 5 minutes. Transfer the baked clams to plates, drizzle with the seasoned juices remaining in the pan, and finally squeeze fresh lemon juice and a little more olive oil over them. Serve with toasted sourdough bread.
Tip
Razor clams cook very quickly, be careful not to overcook them, as they can become chewy. As soon as they open, they are ready!
