Preparation method
First, prepare the dough: Measure the white and whole wheat spelt flour into a large bowl, then make a well in the center. Pour in 200 ml of lukewarm water, add the brown sugar, and crumble in the fresh yeast. Let it stand for 5-10 minutes until the yeast activates. Then add 2 tablespoons of oil and 1 teaspoon of salt, and knead into a smooth dough. Cover with a kitchen towel and let it rise for 20-30 minutes.
Meanwhile, slice the zucchini thinly into a clean bowl, salt it, and let it stand for 5-8 minutes to release its liquid. Peel and crush the garlic, then mix it with the cream cheese. Season with salt and pepper. Thoroughly squeeze out the zucchini and drain off the excess water.
About 10 minutes before the dough finishes rising, preheat the oven to 210 °C. Line a baking sheet with parchment paper.
Chef's tip
It's worth slicing the zucchini very thinly so that it softens perfectly even during the short baking time.
