Preparation method
Preheat the oven to 160 °C.
In a large, oven-safe pot, heat the oil. Place the chicken thighs in it and sear them quickly over high heat on both sides (approx. 2 minutes per side) until golden brown.
Add the diced celery, carrots, red onion, and crushed garlic to the meat. Continue to sauté over medium heat for about 4 minutes.
Chef's tip
If you desire an even richer flavor, you can replace part of the stock with dry white wine.
