Preparation method
Preheat the oven to 220 °C and line a baking tray with baking paper.
Wash the sweet potato and cut it into approximately 2x2 cm cubes. Place them on the baking tray, drizzle with oil, season with salt and pepper, then mix thoroughly. Bake for 25-30 minutes until tender and slightly browned.
Meanwhile, prepare the rice: rinse it, place it in a saucepan with water, and bring to a boil. Then reduce the heat to low, cover, and cook for 12-15 minutes. Once done, remove from heat and let it rest, covered, for another 10 minutes.
Chef's tip
The bowl can also be garnished with fresh basil. If you want to eat it on the go, you can also roll the ingredients into a tortilla as a burrito.
