- 100 g beef tenderloin or aged sirloin
- 15 g capers
- 15 g Parmesan cheese
- 10 g anchovy fillets in oil
- 10 g shallot
- 1 pinch black pepper
- 2 tablespoons olive oil
- 1 teaspoon salt
Cut the well-chilled beef into small cubes, approximately 3 mm in size. It is important not to mince it, but to cut it with a sharp knife to preserve its texture.
Finely chop the anchovies, capers, Parmesan, and shallots. Mix them with the prepared meat, add the olive oil, then season with salt and freshly ground pepper.
Before serving, refrigerate for at least 30 minutes to allow the flavors to meld perfectly. Serve with fresh toast or crispy baguette.
