Preparation method
Preheat the oven to 180 °C. First, prepare the aromatic breadcrumbs: clean the chili pepper from seeds, then chop it finely. Finely chop the parsley and garlic as well, then place them in a bowl.
Add the breadcrumbs, 50 g olive oil, the juice of half a lemon, salt, and pepper, then mix thoroughly.
Debone the chicken thighs (or use fillets), place them skin-side down on a cutting board, cover with cling film, and gently pound them flat. Then salt both sides.
Chef's tip
To prepare the lemon sauce, use a hand whisk to achieve the perfect consistency.
To flip the chicken, use a flat spatula so that the breadcrumbs do not fall off.
