Ingredients
- 200 g beef tenderloin
- 15 g shallot (French shallot)
- 1 teaspoon capers
- 1/2 teaspoon Dijon mustard
- 2 teaspoons Worcestershire sauce
- 1 tablespoon extra virgin olive oil
- 1 egg yolk
- 2 pinches cayenne pepper
- freshly ground black pepper to taste
- salt to taste
Preparation
- 1Rinse the capers, dry them, then chop finely. Clean the shallots and cut them into very fine cubes.
- 2Remove the beef tenderloin from the refrigerator and slice it very thinly. Cut the slices into matchstick-thin strips, then chop the strips into very small pieces. Finally, finely mince the meat again with a sharp knife. Work quickly so that the meat does not warm up.
- 3Quickly mix the meat with a fork with the other ingredients (mustard, Worcestershire sauce, olive oil, onion, capers, and spices). Form a small mound on the plate and make an indentation in the center.
- 4Place the raw egg yolk into the indentation. When serving, everyone mixes the egg into the meat themselves. Serve with toast and garlic.
Tip
For an even more special taste experience, you can also add a teaspoon of lime juice, finely chopped anchovies, or finely chopped parsley.
