Preparing and Marinating the Meat
First, prepare the marinade. In a bowl, mix together the crushed garlic, lemon juice, fajita seasoning mix, salt, pepper, and 3 tablespoons of olive oil.
Wash the pork tenderloin, pat it dry, and cut it into thin strips. Place it in the marinade, mix thoroughly to ensure the seasoned mixture covers all the meat. Let it marinate for at least 1 hour in the refrigerator.
Preheat the grill or a pan to medium heat. Cook the pork strips for at least 3 minutes per side, until they are nicely browned and cooked through.
