PREPARATION OF RED ONION CHUTNEY
Peel the onion, cut it in half, then slice it into thin strips.
Heat olive oil in a deep pan and sauté the onion until translucent. Add the cane sugar and wait until it slightly caramelizes. Pour in the cognac and let the alcohol evaporate.
Add the remaining spices (salt, pepper, thyme, chili) and cook over low heat until the liquid reduces by half. Finally, stir in the honey and season with salt to taste.
