Preparation method
If using leftover pasta, take it out of the fridge to reach room temperature. If preparing fresh, cook the pasta according to package directions, then let it cool.
In a bowl, whisk the eggs with the grated Parmesan. Add the diced mozzarella, ham (if using), and finely chopped onion. Stir in the cooked pasta and mix thoroughly so that the egg coats everything. Season with salt and pepper to taste.
Heat the olive oil in a medium-sized pan over medium heat. Pour the pasta-egg mixture into the pan and spread it evenly. Cook the frittata for 5-7 minutes, until the bottom is golden brown and the top begins to set.
Chef's tip
You can use any type of leftover pasta and feel free to vary it with different cheeses, vegetables, or meats, depending on what you have in your fridge.
