Cut the stale white bread into cubes of about 1.5–2 cm. In a bowl, whisk the eggs with the milk, a pinch of salt, and ground black pepper, then toss in the bread cubes to let them soak up the mixture (about 3–5 minutes).
Finely dice the Kolozsvári bacon, slice the red onion into thin half-moons, crush the garlic, and chop the fresh parsley. Mix the sour cream with the crushed garlic and a tiny pinch of salt.
Cooking in a skillet
In a large skillet over medium heat, fry the diced bacon until golden brown, then remove the crispy cracklings to a small plate. Add the butter to the flavorful rendered fat remaining in the skillet and allow it to melt.
Chef's tip
This works with any type of stale baked goods: sourdough bread, rolls, or crescent rolls are also perfect bases.
If you are looking for an extra smoky flavor, you can also sprinkle a little sweet or hot paprika on top before serving.
