Preparation method
Preheat the oven to 180 °C.
Season the carp fillets with salt and pepper on all sides, then dredge them in flour. Gently shake off any excess flour.
In a non-stick pan, melt 50 g of butter over medium heat. Place the fish skin-side down and cook for 1.5 minutes. Reduce the heat, flip the fish, and cook the other side for half a minute. Remove from the pan, place on a baking sheet skin-side up, and bake in the preheated oven for 7 minutes.
Chef's tip
Use smaller sage leaves – these are younger and have a more intense flavor. If you only have large leaves, chop them coarsely.
You can also substitute wine with lemon juice. In this case, use the juice of half a fresh lemon.
For those who prefer a tangier taste, drizzle the fish with a few drops of lemon juice when serving.
Crispy white bread, boiled potatoes, or roasted vegetables make excellent side dishes.
