
Steak quesadilla with spicy sauce and herbs

Preparation method
Heat 1 tablespoon of oil in a pan over medium-high heat. Season the steak with salt and pepper, then cook both sides for 3-4 minutes, depending on desired doneness. Place the cooked meat on a cutting board, cover with aluminum foil, and let it rest for 10 minutes. Then slice it thinly.
Pour the remaining 1 tablespoon of oil into the pan. Add the sliced red onion and peppers, then sauté over medium heat for about 6 minutes, until softened and slightly browned. Stir in the crushed garlic, chopped cilantro, lime juice, and spicy tomato sauce. Mix well and cook for a short time, about 1 minute.
Sprinkle a quarter of the cheddar cheese on each tortilla, top with steak slices, the vegetable mixture, then sprinkle with a little gouda cheese. Fold the tortillas in half.
