Ingredients
- 500 g pork belly
- 1 tbsp granulated sugar
- 2 tbsp fish sauce
- 1 tsp salt
- 1 pinch black pepper
- 1 bunch spring onion for garnish
- 250 g jasmine rice
Steps
- 1Heat the sugar with a little water in a pan over medium heat until it starts to caramelize. Then add the diced pork, fish sauce, salt, and pepper. Mix thoroughly, then let it rest for 30 minutes.
- 2Sear the meat for about 8 minutes until it gets a nice dark color. Pour in enough water to just cover the meat, then cook for about 1 hour until most of the water evaporates and the meat becomes tender.
- 3Serve with freshly cooked jasmine rice, garnished with finely chopped spring onions.
