Place the beef ribs in a large pot with enough water to cover them. Add salt, bay leaves, whole peppercorns, and allspice. Cook the meat until tender (approx. 1.5-2 hours), then remove and let it cool.
Meanwhile, prepare the BBQ sauce: In a bowl, thoroughly mix the ketchup, vinegar, brown sugar, honey, oil, Worcestershire sauce, mustard, smoked paprika, and ground pepper.
Generously coat the cooled ribs with the sauce on all sides. Let it marinate in the refrigerator, ideally overnight, but for at least 2 hours.
Chef's tip
It is advisable to cook and marinate the meat the day before, so the flavors can penetrate the fibers more deeply.
