Preparation method
Preparation and Marinating
In a small saucepan, mix the soy sauce, sugar, grated ginger, and crushed garlic. Let it thicken (reduce) slightly over low heat, then remove from heat and let it cool.
Rinse the tuna steak, pat it dry, then dip each side into the prepared marinade and thoroughly coat it in black sesame seeds. Place it in the refrigerator to rest for at least half an hour.
Salad and Cooking
Meanwhile, prepare the salad dressing. In a small bowl, mix the olive oil, honey, water, and rice vinegar. Season with salt and pepper to taste.
Chef's tip
Do not overcook the tuna, as it can easily dry out. The goal is a 'rare' or 'medium-rare' state, where the center is still vibrant pink.
