Preparation method

Preparing the bao buns

Dissolve the fresh yeast in lukewarm water with a pinch of salt, then let it rest for 5 minutes until slightly foamy.

In a bowl, combine the flour with the yeast water and salt, then knead into a smooth, elastic dough for about 8-10 minutes. Cover with a clean kitchen towel and let it rise in a warm place for 45 minutes until doubled in size.

Divide the risen dough into 8 equal parts, shape them into small balls, then roll them into an oval shape. Lightly brush the surface with sunflower oil, fold them in half over strips of baking paper, and let them rise for another 15 minutes.

Chef's tip

If you want extra crispy chicken, use a double-frying method: fry first for 3 minutes, let rest for 2 minutes, then fry for another 1-2 minutes in hotter oil.

The steamed buns freeze exceptionally well! After cooling down, place them in freezer bags, and re-steam them for a few minutes when ready to use.
