- 900 g smoked tied pork shoulder or ham
- 100 ml pineapple juice
- 1 pc orange
- 3 tbsp maple syrup
- 1 tsp ground ginger
- 1 tsp ground star anise
- 1 handful whole cloves
Preheat the oven to 170 degrees Celsius (top and bottom heat). Score the skin or fatty layer of the ham in a criss-cross pattern, about half a centimeter deep. Insert a whole clove into the center of each small square.
Cut one half of the orange into thin slices, and squeeze the juice from the other half. In a bowl, mix together the pineapple juice, freshly squeezed orange juice, maple syrup, ground ginger, and ground star anise.
Line a baking tray or ovenproof dish with baking paper and arrange the orange slices. Place the prepared ham on top, then pour the spiced marinade over it. Bake for approximately 1 hour, basting the ham thoroughly with the glaze from the tray every 15 minutes to ensure it becomes beautifully shiny and flavorful.
Chef's tip
Roasted potatoes or a freshly baked, crispy baguette are excellent side dishes. For leftovers, the ham is perfect cold in sandwiches.
