
Roasted cauliflower with tahini dressing and za'atar spice

Preparation method
Preheat the oven to 180 degrees Celsius (top and bottom heat). Clean the cauliflower by removing its outer leaves and trimming the stem so it stands stably. Place the cauliflower on a baking sheet lined with parchment paper.
Brush the cauliflower with olive oil, sprinkle with za'atar spice blend and salt. Pour about 1 dl of water underneath, cover with aluminum foil, and bake for 30-35 minutes. Then remove the foil, brush again with a little olive oil, and bake uncovered for another 5 minutes until golden brown.
For the dressing, mix the tahini paste, lemon juice, 4 tablespoons of water, 2 tablespoons of olive oil, crushed garlic, and a pinch of salt until you get a smooth sauce.
Chef's tip
If the tahini dressing is too thick, add a little more water until you reach the desired consistency.
