
Basil Carrot Patties with Smoked Tofu

Preparation method
Grate the smoked tofu and peeled carrots coarsely, then place both in a bowl. Add the eggs, spelt flour, dried basil, curry powder, a pinch of salt, and pepper. Mix thoroughly until you get a smooth mixture.
Heat olive oil in a large pan. Using a spoon, form smaller patties from the mixture directly in the pan (about 4 pieces fit at a time). Fry over medium heat for 2-4 minutes per side until golden brown and crispy. Approximately 16 patties can be made from the mixture in total.
Divide the cooked patties among plates and serve warm.
