- 450 g salmon fillet (3 slices)
- 150 g whole wheat couscous (dry)
- 2 tablespoons fresh parsley (coarsely chopped)
- 70 ml cooking cream (12% fat)
- Zest and juice of 1 medium lemon
- 1 tablespoon dried basil
- 2 tablespoons fresh mint (coarsely chopped)
- 1 pinch salt
- 1 pinch ground black pepper
Preheat the oven to 180–185 °C and prepare a baking dish approximately 20 cm × 30 cm.
Prepare the couscous according to the instructions on the package. Once ready, mix in the mint, parsley, lemon zest and juice, basil, cream, salt, and pepper. Stir thoroughly, then pour the entire mixture into the baking dish.
Place the salmon fillets on top of the couscous, skin-side up. Put the baking dish into the preheated oven and bake for 15–17 minutes at 180–185 °C.
Chef's tip
When serving, you can garnish the plate with a slice of lemon or fresh, coarsely chopped herbs.
