Preparation method
First, cook the rice: Pour 300 ml of water into a small pot, add the brown rice, cover, and cook over medium heat for 20–25 minutes (or according to package directions).
Meanwhile, heat a non-stick pan over medium heat. Add the minced turkey and halved cherry tomatoes. Season with salt, pepper, oregano, and cumin. Stir occasionally and sauté for about 10 minutes. When done, turn off the heat and leave the meat mixture in the pan until the rice is cooked. Finally, add the thinly sliced black olives and the cooked rice, then mix thoroughly.
For the salad, thinly slice the cucumber, place it in a bowl with the crumbled feta cheese, red onion, and yogurt. Season with a little salt and pepper, then toss to combine.
