Ingredients
- 250 g all-purpose wheat flour
- 5 pcs eggs
- 1 pinch ground nutmeg
- 1 pinch pepper
- 1 pinch salt and salt for the cooking water
- 200 g Bergkäse, Emmental or Raclette cheese
- 40 g butter
- 80 g red onion
- fresh chives for garnish
Steps
- 1Bring water to a boil in a large pot and salt it generously (approx. 2 tablespoons of salt for 4 liters of water).
- 2In a bowl, mix the flour, eggs, nutmeg, salt, and pepper until you get a smooth, elastic dough.
- 3Using a spaetzle maker or spaetzle press, drop the dough into the boiling water in several batches. Cook each batch for approx. 2 minutes, until they float to the surface.
- 4Remove the spaetzle with a slotted spoon and place them in a bowl.
- 5Finely chop the red onion and coarsely grate the cheese.
- 6In a large pan, melt the butter over medium heat and sauté the onion until golden brown.
- 7Add the spaetzle to the onion and sauté, stirring occasionally, until golden in places. Then remove from heat.
- 8Stir in the grated cheese, sprinkle with chopped chives, and serve immediately while the cheese is gooey and hot.
