Preparation method
First, prepare the dough. Mix the flour with the larger part of the salt. In a small saucepan, melt the lard, then add the sparkling water to make it lukewarm. Pour the mixture into a bowl with the flour and knead for about 5 minutes until you get an elastic and non-sticky dough. Wrap it in cling film and let it rest in the refrigerator for at least 30 minutes.
Prepare the toppings. Since Flammkuchen bakes for a very short time, slice everything very thinly. Wash and slice the figs. Mix the sour cream with the cream cheese, season with the remaining salt and pepper to taste.
Preheat the oven to maximum (250 °C). Leave the baking tray inside so it also gets hot – this will make the bottom of the tart truly crispy.
