Preparation method
Place the couscous in a bowl, pour 200 ml of hot water over it, salt it, then let it rest covered until it swells.
Cut the zucchini and tomatoes into smaller cubes (if the zucchini is not tender, remove its seeds). Finely chop the red onion, and thinly slice the garlic. Deseed and chop the chili.
Heat a little oil in a pan and sauté the onion, zucchini, and garlic for a short time. Then mix it with the prepared couscous. Add the diced tomatoes, chopped parsley, and chili. Season with fresh lime juice and salt as needed.
Chef's tip
Do not overcook the fish to keep it juicy. If the flesh flakes easily along its layers, it's done.
